Homemade Tator Chips

OMG! I love potato chips! Crunchy, salty, spicy, cheesy, plain, I love them all. And, I really love to make them at home. I have been to a few restaurants that make their own chips and I always love them, so a few years ago, I decided to give it a try myself, and man was I glad I did. It took me several tries to get it right, but once I did, I was sure I would make these again and again.

I decided to make some last night and thought “I need to share these with my wonderful friends”. So, here we go.

I only had to do two potatoes to make this batch, (of course I munched on them whilst I was cooking) but you can do as many as you like. I do, however, recommend only slicing one potato at a time. The first time I did it, I sliced a bunch of potatoes and ended up with the biggest batch of chips you have ever seen, which was okay with my friends because I sent them home with a bag of my yummy chips.

I would also recommend using a mandolin to slice the potatoes or you will have different thickness with each chip and they will not cook evenly. I slice mine so thin you can see through them, if you want a heftier chip, you will want to slice them a little thicker.

You will need:

Potatoes

oil

saucepan

sheet pan

paper towerls

tongs

mandolin

And a big ol’ craving for some homemade crispy chips!!!

The first step is to fill a 2 qt. sauce pan 3/4 of the way full with oil, which ever you choose, I used vegetable oil, and let it heat up while you slice your potatoes. I heat mine on high, like I’m going to cook french fries.

Prep a sheet pan with a paper towel so you will have a place to put the chips as you get them out of the hot oil.

Slice your potatoes and when you think the oil is hot enough, drop one slice of potato in the oil and test it. The chip will brown quickly but you don’t want it to over brown.

After the test chip is done, remove and put on a paper towel to cool. At this point, I salt my chips so the salt will stick to the chips. You can add any seasoning you want, a packet of ranch is great to sprinkle on them, or something a little spicy like chili powder, or just some garlic powder. Here is one I bet you didn’t think of, you can use a package of the powdered cheese from a box of macaroni to make cheese chips and believe it or not, it is pretty tasty.

Repeat the process until you have the desired amount of chips.

Whew, that was easy, slice, fry, season and eat!! And these are so tasty and super crispy. You can dip them, or eat them plain, they are great either way.
